These low GI gems full of vitamin A are as versatile as the humble potato.
For a mid week side dish, peel and dice 1-2 sweet medium potatoes, steam in the microwave with ½ a lemon for 8-10 minutes (depending on your wattage). Smash the sweet potato and add 50g crumbed feta and some chopped coriander.
