This delicious dessert is also a great source of fibre thanks to both the apple and oats. You can keep the skin on like I have for even more! Fibre helps keep you full and satisfied for longer while maintaining good bowel health. It can also play a role in lowering cholesterol levels and controlling blood sugar levels.

Ingredients

Filling:

  • 3 medium apples sliced to ~0.5cm thick. I prefer Granny Smith apples, but you can use whichever you’d like
  • 3 tablespoons of water
  • ½ tsp cinnamon

Crumble:

  • 1 cup rolled oats
  • 1/2 cup flake almonds
  • 1/2 cup flaked coconut
  • 1 tsp cinnamon
  • 2 tbsp golden syrup or
  • 2 tbs nut oil (e.g. macadamia) or olive oil
  • 1/4 tsp vanilla bean paste

Method:

  1. Pre-heat oven to 180 degrees
  2. Place chopped apple in medium sized baking dish
  3. In a separate bowl, mix water and cinnamon. Pour cinnamon water over the apples and stir through so that apples are all covered in cinnamon
  4. Bake apples for 15 minutes or until softened and stir regularly
  5. While the apples are baking, mix all crumble ingredients in a large bowl
  6. Once apples have cooked, pour crumble over baked apple
  7. Bake apple crumble for another 20 minutes. Halfway through use a spoon to mix crumble to ensure it is all cooked through and none is burning
  8. Cook until golden brown
  9. Serve with yoghurt and enjoy!
