22 Mar Autumn Recipe: Apple Crumble

This delicious dessert is also a great source of fibre thanks to both the apple and oats. You can keep the skin on like I have for even more! Fibre helps keep you full and satisfied for longer while maintaining good bowel health. It can also play a role in lowering cholesterol levels and controlling blood sugar levels.
Ingredients
Filling:
- 3 medium apples sliced to ~0.5cm thick. I prefer Granny Smith apples, but you can use whichever you’d like
- 3 tablespoons of water
- ½ tsp cinnamon
Crumble:
- 1 cup rolled oats
- 1/2 cup flake almonds
- 1/2 cup flaked coconut
- 1 tsp cinnamon
- 2 tbsp golden syrup or
- 2 tbs nut oil (e.g. macadamia) or olive oil
- 1/4 tsp vanilla bean paste
Method:
- Pre-heat oven to 180 degrees
- Place chopped apple in medium sized baking dish
- In a separate bowl, mix water and cinnamon. Pour cinnamon water over the apples and stir through so that apples are all covered in cinnamon
- Bake apples for 15 minutes or until softened and stir regularly
- While the apples are baking, mix all crumble ingredients in a large bowl
- Once apples have cooked, pour crumble over baked apple
- Bake apple crumble for another 20 minutes. Halfway through use a spoon to mix crumble to ensure it is all cooked through and none is burning
- Cook until golden brown
- Serve with yoghurt and enjoy!
