29 Mar Autumn recipe: Zoodles with Meatballs
Enjoy this awesome recipe for the autumn months.
-500g lean beef or pork mince
-1 small brown onion
-¼ cup basil leaves, chopped
-1 tbsp. olive oil
-1 bottle passata sauce
-3 medium zucchini, spiralised
-¼ cup grated or shaved parmesan cheese
-Rocket, cherry tomatoes to serve
- In a large bowl combine mince, onion and basil. Season and roll into tablespoon size balls.
- Heat oil in large saucepan, cooking meatballs for 6-7 minutes or until brown on all sides. Add passata sauce and simmer for 5 minutes or until slightly reduced.
- Add zucchini noodles and toss through to coat. Serve with size salad.
