Our Dietitian Tip of the Month!

Stone fruit are full of fibre, vitamin A, Vitamin C, potassium and plenty of other goodies.

In summer, they are perfect with a little ice-cream for a simple dessert or treat.

Towards the end of the season, when the produce is looking a little soft or bruised, use them to bake a fruit crumble.

You’ll need about a kilogram (total) of your favourite stone fruit and mixed berries.  Remove the stones and quarter the fruit. Lay in a baking dish or 6 individual ramekins.  In a bowl, combine half a cup of self-raising flour and half a cup rolled oats, 50g flaked almonds and 100g melted butter or margarine.  You can add 50g of brown sugar, however I think the stone fruit doesn’t require the additional sugar in the crumble.  Layer the crumble over the chopped fruit and berries and bake in the oven at 180 for 30-40 minutes or until the fruit is bubbling and soft and the crumble is golden.
