26 Aug Spring Recipe – Barbecued Asparagus with Lemon, feta and mint

As we enter a new season and welcome warmer weather, we also often see a change in what we gravitate towards for meals. Dust off your BBQ, as we have the perfect side dish to go along with your meal with our seasonal produce star – asparagus! Not only is asparagus tasty, but it also is packed with Vitamin C, potassium and B Vitamins.
Ingredients
- 1 lemon
- 2 tbsp extra virgin olive oil
- 4 bunches of asparagus, trimming the woody ends
- 100g marinated feta, crumbled
- 1/2 cup mint leaves
- 1/4 cup flaked almonds, toasted
Method
- Preheat a BBQ on medium heat
- Remove the lemon zest using a zester or grater and set aside for later
- Juice the lemon
- Whisk lemon juice and 1.5 tablespoons of the oil, set aside
- Coat asparagus with remaining oil and cook on the BBQ, turning over throughout for approximately 3-minutes, or until tender and slightly charred
- Transfer asparagus to a serving platter and pour lemon dressing over
- Sprinkle with lemon zest, feta, mint and almonds
