31 Mar Autumn Recipe: Pear and Walnut Salad

Pears contain Vitamin C, which is an important component in keeping your immune system strong to keep you healthy! The walnuts in the salad (while not a seasonal produce item) are a great source of Omega-3, which is an essential fatty acid and considered one of the ‘healthy fats’. Omega-3 Fatty Acids play a role in reducing blood cholesterol and are anti-inflammatory.
Ingredients:
- 2 cups of mixed salad leaves
- 2 cups baby spinach
- 2 pears, sliced into wedges (keep the skin on for extra fibre)
- 150g roughly chopped walnuts
- 200g low fat feta cheese
- Balsamic vinegar as needed for dressing
Method:
- In a large salad bowl, combine mixed salad leaves and baby spinach
- Mix through pear wedges and walnuts
- Crumble feta over the salad
- Add dressing as required and enjoy!
